Los Nubarrones, located in the heart of Nueva Segovia, Nicaragua, is a prime example of sustainable and high-quality coffee production. Owned by Mariano Rafael Montealegre Callejas since 2010, the farm spans 3.87 hectares at altitudes between 1450 and 1700 meters above sea level.

The farm employs three permanent workers and expands its workforce to ten during the harvest season, which runs from December to April. The primary coffee variety grown here is Java, nurtured in sandy loam soil.

The coffee is cultivated using eco-friendly methods, with shade provided by various forest species, fruit trees, and musaceas. Low-intensity pesticides and organic fertilizers are employed, complemented by synthetic fertilizers. Regular pruning improves plant tissue, and shade management enhances light infiltration on the farm. Only mature coffee cherries are harvested.

After harvesting, the coffee cherries are measured, sorted, and floated before being packed and transported in plastic bags and macen sacks to the dry mill. At the mill, the coffee is dried on African beds covered within microtunnels, ensuring it never contacts the ground. The dried coffee is stored separately in special areas using new plastic bags and macen sacks.

Once the coffee reaches a moisture content of 11 to 11.5%, it is stored in optimal conditions for about a month before being hulled and classified according to the client's specifications. The final product is packed in jute sacks and Ecotact bags, accompanied by the appropriate ICO certification.

The coffee from Los Nubarrones is paid for based on quality, ensuring fair compensation for the farmers. The primary challenge faced by the farm is climate change, which has significantly increased production costs. Despite this, Los Nubarrones continues to produce exceptional coffee, maintaining its commitment to quality and sustainability.
